Lemon Bliss Balls. Enjoying the last but of summer with these no bake treats. They’re easy to make, nutritious, and bursting with lemon flavor.
Ingredients //
1 cup almond flour
1/2 cup shredded coconut
1 tbsp lemon zest
2 tbsp fresh lemon juice
3 tbsp honey
1 tsp vanilla extract
Pinch of sea salt
More coconut, for rolling
To make //
In a food processor, add all the ingredients and pulse until the mixture comes together. Refrigerate the “dough” for 10-15 minutes, then use a cookie dough scooper or your hands to form small bite-sized balls. Roll them until smooth, and decorate with more shredded coconut. Store in the fridge for up to 7 days, or in the freezer for 1-2 months. Enjoy!
