soft chocolate cookies. made these over the rainy weekend and loved them! so soft, chocolaty, and slightly coconutty from the coconut oil + sugar.
ingredients //
¼ cup coconut oil, softened
½ cup coconut sugar or brown sugar
1 tsp vanilla extract
1 egg
½ cup flour + 2 tbsp
2 tbsp cocoa powder
½ tsp baking soda
½ tsp baking powder
pinch of sea salt
chocolate chips
to make //
preheat the oven to 350F. in a bowl, combine the coconut oil and sugar together with a mixer until fluffy. add in the vanilla extract and egg, mixing until combined. in a separate bowl, combine the dry ingredients. slowly add dry to wet, mixing until combined. fold in chocolate chips. if you find the dough too soft, you can refrigerate it for 10-20 mins before handling. portion 12 cookies on a baking tray lined with parchment paper. sprinkle with sea salt or coarse sugar. bake for 9-10 mins. let cool before enjoying!
