double chocolate oatmeal cookies. super fudgy cookies that still pack healthier-for-you ingredients. made with oats, almond flour, + coconut oil.
ingredients //
1 cup old fashioned oats + a lil more
½ cup almond flour + 1 tbsp
⅓ cup cocoa powder
½ tsp baking soda
¼ tsp salt
¼ cup maple syrup
3 tbsp coconut oil, melted
1 large egg, room temp
1 tsp vanilla extract
½ cup dark choc chips

preheat the oven to 350F. in a mixing bowl, combine the oats, almond flour, cocoa powder, baking soda, and salt. stir until combined. in a separate bowl, whisk together the coconut oil, maple syrup, egg, and vanilla extract. gradually add wet to dry, stirring until a dough forms. fold in the dark chocolate chips.
the dough will feel wet, so feel free to add a little bit more oats if desired. i initially added a few more oats (1-2 tbsp) and placed my dough in the freezer for a few mins to firm up. using a cookie scoop, drop rounded tbsp of dough on a baking sheet lined with parchment paper. bake for 10-12 mins or until the edges are set. let cool on the baking sheet, then transfer to a wire rack. enjoy!
