super soft peanut butter cookies. a healthier for you cookie that’s SUPER delicious! topped with sugar for a little touch of sweetness.
ingredients //
½ cup coconut oil, softened
1 cup peanut butter (natural)
1 cup coconut sugar
1 large egg
1 tsp vanilla extract
1 cup almond flour
1 cup oat flour
¾ tsp baking powder
¾ tsp baking soda
½ tsp cinnamon
to make //
preheat the oven to 350F. in a medium bowl, cream together the softened coconut oil, peanut butter, and coconut sugar until well combined and creamy. add the egg and vanilla extract to the peanut butter mixture. beat until smooth and well incorporated.
in a separate bowl, whisk together the oat flour, almond flour, baking powder, baking soda, and salt (only use if using unsalted pb). gradually add dry to wet, mixing until just combined. if the dough is too soft, you can chill it in the freezer for a few mins. scoop out tablespoon-sized portions of dough and roll them into balls, then roll them in sugar (optional).
place on a baking sheet lined with parchment paper, and gently press down on each ball since they won’t spread too much. bake for 11-13 mins. let cool on the baking sheet then transfer to a wire rack. ENJOY!
