how i made my cherry jam //
750g cherries
3/4 cup sugar
juice of 1 lemon
wash the cherries, remove the stems, and pit them. in a saucepan, combine the pitted cherries, sugar (amount can be adjusted depending on sweetness preference), and lemon juice. stir well to combine. over medium heat, bring the mixture to a simmer, stirring occasionally to dissolve the sugar. once the sugar has dissolved, reduce the heat to low and let the mixture simmer gently.
allow the cherries to cook down, stirring occasionally to prevent sticking, for about 25-30 minutes or until the mixture has thickened to your desired consistency. you can test the jam’s thickness by placing a small amount on a chilled plate and running your finger through it. if it holds its shape and doesn’t run back together, it’s ready.
remove the saucepan from the heat. ladle the hot jam into the sterilized jars, leaving about 1/4 inch of space at the top of each jar. allow the jars to cool to room temperature before storing them in the refrigerator. the jam will continue to thicken as it cools. enjoy!
