ingredients //
½ cup unsalted butter, softened
½ cup sugar
1 egg, room temp
1 tsp vanilla extract
1 cup + 2 tbsp all-purpose flour
⅓ cup cocoa powder
½ tsp baking powder

preheat your oven to 350F. line a baking sheet with parchment paper. in a bowl, cream together the softened butter and granulated sugar until smooth. add the egg and vanilla extract, and mix until well combined. in a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. using a cookie scoop, scoop 1-2 tbsp of dough and roll in sprinkles. place on baking sheet leaving space between. bake for 8-10 mins or until the edges are slightly set. the centers may still look soft. allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. enjoy!
