Pumpkin bread with chocolate chips. It’s officially October so of course we’re making pumpkin bread! This healthier version is made with almond flour, maple syrup, coconut oil, and dark chocolate chips.
Ingredients //
1 cup pumpkin puree
2 eggs, room temp
1/3 cup coconut oil, melted
1/2 cup maple syrup
1/4 cup water or milk
1 tsp vanilla extract
1 cup all purpose flour
1 cup almond flour
1 tsp baking soda
1/2 tsp baking powder

Preheat the oven to 325F. In a large bowl, whisk together the coconut oil and maple syrup. Next, whisk in the eggs. Add the pumpkin puree, water or milk, vanilla extract, baking soda, baking powder, pumpkin spice, ground cinnamon, and sea salt. Whisk to combine. Stir in chocolate chips. Bake for 40-45 mins or until a toothpick comes out clean. Let cool before slicing. Enjoy!
