marble loaf cake. a super delicious + fluffy cake swirled with vanilla and chocolate cake flavor. top with a chocolate drizzle or leave unfrosted if you prefer.
ingredients //
½ cup melted butter
¼ cup plain greek yogurt
1 cup sugar
3 large eggs
1 egg yolk
1 tbsp vanilla extract
2 tbsp hot water
1.5 cup flour
1 cup almond flour
1 tsp baking powder
½ tsp salt
3 tbsp dutch process cocoa powder
½ tsp espresso powder

preheat oven to 350F. in a large bowl, beat together the wet ingredients (except the hot water) with an electric mixer. add dry ingredients (except cocoa powder + espresso powder) slowly. beat until batter is smooth. scoop out about half the batter (around 1 ½ cups) into a separate bowl. add the dutch process cocoa powder, espresso powder, + hot water. beat until combined.
line a loaf pan with parchment paper. alternate between batters. bake for 45-50 mins, or until a toothpick comes out clean. i tent the top of mine about halfway through baking to prevent too much browning. let cool for a few mins before transferring to a wire rack. if desired, drizzle with chocolate glaze once the cake has cooled. the chocolate will harden as it cools! i microwave semisweet chocolate chips with a little coconut oil until melted for the drizzle (1/2 cup chips + 1 tsp oil). enjoy!
