Pumpkin Spice Waffles. Fall is here so it’s time for pumpkin spice waffles! This healthier version is crispy on the outside, fluffy on the inside, and perfect for getting into the fall spirit.
Ingredients //
1/2 cup oat flour
1/2 cup all-purpose flour
1 tsp baking powder
2 tsp pumpkin pie spice
Pinch of sea salt
1 egg
1/3 cup + 1 tbsp milk
1/4 cup coconut oil, melted
1/4 cup pumpkin puree
2 tbsp maple syrup
1 tsp vanilla extract

In a large bowl combine the oat flour, all-purpose flour, baking powder, pumpkin pie spice, and sea salt. In a separate bowl, whisk together the egg, milk, coconut oil, pumpkin puree, maple syrup, and vanilla extract. Pour the wet ingredients into the bowl with the dry ingredients. Stir together until combined. The mixture should be thick but pourable.
Next, heat your waffle maker. Coat with butter or oil, then add batter to make waffles. Cook until golden. Transfer to a cooling rack so they stay crispy. Repeat with the remaining batter and serve with your favorite toppings. Enjoy!
